This is on a list of cuts of beef. I need a word other than "brisket," if possible.

Well, I found different names deppending on the type of cut:
Breast Quarters: Halves may be further cut into which include the wing. A breast quarter, including portions of the back, is all white meat.
Split Breast: A breast quarter with the wing removed.
Split Breast without Back: A breast quarter with wing and back portion removed.
And there are more....can't you give us a context???

This is from a list of BEEF cuts...that's all the context I have. I have never heard of "beef breast" - does this really exist? We're not talking about chickens here, as I already noted above. |

Could the particular cut your have in mind be this?
"The term ribs usually refers to the less meaty part of the chops, often cooked as a slab (not cut into separate ribs)." [this is from Wikipedia - see link below]
If you try "rack of ribs" in "" on google you will find it is used in many recipes. As my partner pointed out, on a cow's breast there isn't all that much meat... Brisket is usually a cheap cut of meat, by the way.
