It strikes me that it will be very difficult, if not impossible, to construct this part of the sentence without using the word "and".

There is really no need for the archaic legalese "hereinafter"--the corresponding Spanish is not of an overly formal or legalistic register, so why should the English be?

The problem with "to which reference will later be made" is that it misses the crucial "in this document" component that is implied, but not stated, in the Spanish.

"Thereon" really does not work at all.
