Meu nome e Paulo Henrique, eu já estou aqui há 16 anos na fazenda. Começamos a trabalhar aqui com sistema tradicional da região, trabalhando com cacau convencional, botando química, adobando com química, controle de praga com química. Nossa mão de obra, nós temos 54 funcionários. Nós temos uma pouca rotatividade de mão de obra, assim de entrar e sair, porque e uma das fazendas que paga certinho e o pessoal eles gostam porque além de ter o salário, a pessoa ainda tem o extra por fora, e essa extra e que faz com quem o pessoal ele (Miguel) pra fazenda, ou seja tem pessoas ai fora que querem entrar aqui porem a gente não tem vaga.

Pro meio ambiente, a roca tem muitos escorregos e o escorrego leva pro rio, o rio chamado Ômada^, e esse rio leva ao mar. Então o avantajem que pro meio ambiente que essa intoxicação, esse químico não vai mais. Talvez os vizinhos ......pra agua... mas aqui na fazenda não. Ou seja qualquer agua dentro da fazenda o pessoal pode beber e não tem problema nenhuma. Que a agua e realmente natural... A gente tem esse controle de trabalhar com orgânico.

Em termos de producao, ele diminui mais a producao que o quimico ..... se eu botar o quimico agora daqui a 3, 4, 5 meses a gente ve o resultado.....ja no organico e diferente. No oganico voce aplica hoje pra ver o resultado daqui um ano ou ate mais; o processo e mais lento. Mas em compensacao, temos o preco do organico.... ai consegue um preco de 40 – 50% mais do mercado e estamos trabalhando para conseguir ate um preco melhor, colocando o cacau la fora pro exterior. Entao pela procura, que esta sendo grande do cacau.... que ha tendeneca de faltar cacau no mercado e o organico mais ainda! Porque ta aumentando consumo do organico. Entao a oferta ta diminuindo. Pq Volume de cacau organico e pouco e somos a maior fazenda de cacau organico da bahia.
Video 9: Producing Fine Cocoa
Atraves dessa nossa classificacao, nos estamos trabalhando pro cacau fino, pra ser 100%. Embora talvez seja impossivel, mas estamos trabalhando com essa visao de fazer 100% do nosso cacau como cacau fino. Nesse processo a gente fez uma mudanca nos cochos. Os cochos eram maiores, comecamos a fazer cochos menores, com duas caixas cada um. Entao o volume vai aumentar de cochos, mas em termos de qualidade o caucau melhora. Porque pra ter uma qualididade do cacau....o primeiro passo e a colheita, e o segundo o transporte com rapidez, e a terceira e fermentacao... e todo esse processo a gente mudou pra poder ter uma qualidade melhor do nosso cacau.... entao com essas mudancas que fizemos – e comecamos a fazer classificacao – da pra ver que tem uma mudanca na qualidade do cacau.... e uma variacao... esse lote deu bom e esse deu ruim, nao! Sempre ta proximo do outro com a variacao pouca entao a maioria dos nossos lotes sao do cacau fino.

Quando passamos pro organico, ai que comecamos com melhor qualidade, que antes a gente nao se preocupava com qualidade.... era talvez em volume, sabendo que o preco nao variava muito _________ mas o preco nao variava muito. Mas quando voce comeca a trabalhar com a qualidade, mesmo co ma producao menor ai que voce ja ve que tem mercado, tem procura, e o pessoal quando ve o nosso cacau, ele fica assim encantado! Ve a qualidade dento do cacau, o cheiro do cacau, o visual do cacau... quando ve cacau na barcaca, o cheiro do cacau, ja e uma outra qualidade. Entao com base nessas qualidades que a gente vem procurando melhorar, faz classificacao de todos os lotes . Ai gente ve avantajem e tem resultado de trabalhar com organico.

Existe uma tabela de classificacao para cacau fino, embora cada impresa ela determina, tem uma padrao para sua classificacao. A nossa, a gente segue uma classificacao da regiao como cacau fino; todos tem essa padrao. Entao 80% do cacau tem que ser um cacau marrom e no maximo 20% de violeto. O nosso tem assim 12%, 13%, 14% e a tendencia de diminuir o cacau violeto... ardosa nao tem cacau germinado, na nossa classsificacao e bem pouco e o mofo interno, que prejudica a qualidade do cacau quando faz no caso do chocolate que quando passa de 2% pra 3%, 4% essa mudanca faz com que o chocolate fica com gosto ruim. Entao a gente trabalha pra ter esse 0% de cacau que tem esse mofo interno, e a gente esta conseguindo. Entao no proceso de fermentacao, no processo de secagem, quanto mais rapido o melhor. A gente esta conseguindo menter esse 0% de cacau com esse.... 2% e o maximo e a gente ta conseguindo 0%.

There are advantages with organic – one factor is that the workers don’t fall ill as often as they did before. There were effects from the chemicals, with the liquid and powder products – the powder even worse, as it poisoned the workers. There were folks that couldn’t work directly in contact with the chemical products because their bodies would become poisoned and blisters would form – there were certain tasks that they weren’t able to do, but after the chemicals, all of that ended. So, already it’s a better quality of life for the workers. It has become better in that sense, also in the sense that we see more birds on the farm, because previously there were very few. We’ve seen an abundance of parakeets unlike anything we’ve seen before. In the times of chemical use, that never happened; but after we switched to organic, birds began to appear in such a volume, the likes of which we had never seen in this area. Once we stopped with the chemicals, some species began to immigrate here.

My name is Paulo Henrique, and I have been with the farm for 16 years. We began working here in the traditional way of the region, working with conventional cacao, utilizing chemicals, tanning with chemicals, pest control with chemicals. After about 5 years, the owner Renato Carvalho decided to switch to organic, since he appreciates organic and natural products, and he realized that a lot of folks are switching to organic, and it’s growing a lot. For that reason he opted for the organic.

Yes I can definitely say that we have a team, and that the team works united. Rivalry doesn’t exist amongst the employees. Even if we don’t have such a huge quantity for employees, there’s no such thing as, “I don’t work with so-and-so because I don’t get along with him” or “I don’t work with him because we fought and we don’t get along” No. Everyone is unified and all cooperate with each other. They joke around amongst themselves, friendships exist, there’s no rivalry. In the way that I interact with the employees, I lead them not as a boss or foreman, but as a companion, there exists a certain kind of friendship between us.

The employees, principally involved in the processing, in the transport of the cacao, the drying of the cacao, are a more established group. We can’t have people that enter today and leave tomorrow, because that’s how the quality of the cacao can decline. These folks understand what we say and try to comply with what we ask, and that’s why the quality of the cacao is always improving, because the folks understand our interest for the region. They also understand our interest this their personal health, as we no longer use chemicals; and they know that the farm brings in a profit that others around don’t have.

In our workforce, we have 54 employees. We have very little turn-over, because we are a farm that pays well. The folks like this because beyond the salary, they have extra on the side, and that extra makes them want to stay with the farm. There are folks out there that want to work here, but we don’t have any openings.

In regards to the environment: the farm has a lot of runoff which ends up in the river “Omada”, and the river takes the runoff to the ocean. So the advantage for the environment is that those toxic chemicals don’t end up in the ocean anymore. It’s possible that the neighboring farms still have chemical runoff, but not here. All of the water from the farm is drinkable. The employees can drink it without any problems, since the water is all natural. We have the ability to control that working with organic.

In terms of production, we produce less now than with the chemical. If I were to use chemicals, in 3-5 months we would see results. However it is different with organic. With the organic, we apply today and see the results in a year, maybe more. The process is slower. However in compensation, we have the price of the organic. It’s possible to obtain a price 40-50% greater than market, and we are working for a better price by selling the cacao internationally. There is a high demand for cacao, and there is a tendency for it to lack in the market, especially organic, because the consumption of cacao is increasing. The volume of cacao out there is small, and we are the largest organic cacao farm of Bahia.

Through our classification, we are working to produce 100% fine cacao, though it may be impossible, but we are working towards our objective of crafting 100% fine cacao. In this process, we made a change in the trough size. The troughs used to be larger, then we changed to smaller troughs, with 2 boxes each. So the volume of troughs has gone up, but the quality of the cacao has improved. To have good quality, the first step is the harvest, and the second is speedy transportation, and the third is fermentation. We changed this entire process to produce higher quality cacao, and we can see that the quality of the cacao has improved due to these changes. There’s not much deviation between batches, like “This batch was good, and this one was bad”, no. They are always similar to one another with little variation. The majority of our batches are of fine cacao.

When we switched to organic, the quality began to improve, something that we never used to worry much about. We were more concerned with volume, since the prices didn’t fluctuate much. However when we started focusing on quality, even with a lower production level we see that there is a market, a demand. When folks see our cacao they fall in love! They can see the quality in the cacao, the smell, the sight. When they see the cacao in the barge, the smell is on another level. So due to our pursuit of higher quality, the batches make a higher classification. Here we see the advantage and results of working with organic cacao.

There is a classification table for fine cacao, though each company determines their own standard. For ours, we follow the regional standard for fine cacao; everyone follows this standard. 80% of the cacao must be “brown cacao”, with a maximum of 20% “violet cacao”; ours on average has 12-14% with a tendency to have even less. In our classification there is very little germinated cacao, and very little internal mold which affects the quality, for example in the case of chocolate. When the percentage passes 2-4% it gives the chocolate a bad flavor. So we work hard to insure that there is 0% internal mold, in which we are succeeding. In the fermentation process, in the drying process, the faster the better. So we are succeeding in this 0% rate.
